Kennedy & Wilson chocolate is handmade on a small property in Gruyere, in Victoria’s Yarra Valley. In addition to their chocolate making business, Kennedy & Wilson also operate a small wine label. Chocolate and wine – what better combination?
Featured in the April 2015 edition of Country Style Magazine, winemaker and chocolatier Peter Wilson, approaches the process of chocolate making as he does wine making. ‘Peter applied his winemaking nose and palate to the art of making chocolate and used the finest imported and local ingredients’, explained Country Style.
Peter is quoted saying, ‘We wanted to make something that tasted like chocolate and not sugar. And a chocolate that could be evaluated the way that you judge wine – its complexity, is it true to type, does it taste like the regions of the cacao that went into the blends?’
Although Kennedy & Wilson is particularly known for their rich dark chocolate with a 70% cacao content, they also make delicious milk chocolate using a 48% blend, creating an intense but creamy flavour. Plus all their chocolate is gluten free!
